Looking for healthy and tasty starter for any meal? Try this delicious salad as an overture to a festive brunch or ordinary, yet healthy meal. Serve the greens as a side dish or make it more filling by adding some protein like toasted nuts, tofu, chicken, or  shrimp.


Bunch of mixed greens (about 2/3 of a large salad bowl)

or entire romano lettuce instead.

5 radishes sliced as thin half moons. 

1/2 cucumber  similarly cut

1-2 stalks of spring onion, chopped

sprouts and/or sunflower seeds to sprinkle



2 Tb olive oil

1 Tb lemon juice or apple cider vinegar

1 ts Dijon mustard

1/2 ts honey

salt and pepper to taste

Spring green salad

1. Combine the tasty greens in a large bowl.

2. Make the dressing by whisking together the first 4 ingredients and season them to taste with salt and pepper.

3. Add the dressing gradually by spooning it over the greens and tossing.

4. Taste it as you go and adjust salt and pepper accordingly.  It should not be overdressed or it will become soggy.
